We spoke with Teresa and got to know what she was most looking forward to this upcoming summer.

What are you most looking forward to after lockdown?

Seeing our children, our family members and friends . Getting on a plane. We are really looking forward to flight restrictions being lifted so that we can travel to Toronto and Melbourne to visit our daughters or for them to be able to fly home again to Ireland. It seems such a long time since we have seen them in person. I think this is one of the hardest things about lockdown.

Where do you most look forward to eating (Sligo or elsewhere)?

We are looking forward to Eithna famous seafood platter in Eithnas by the sea. Once we call, Eithna reserves our special table upstairs by the window overlooking the sea and she knows to add an extra portion of her wonderful seaweed pesto with a basket of her homemade breads. We are also looking forward to visiting the small bistros where we used to live in Paris, especially our friend’s restaurant Le bistrot de Senlis.

Where would you go for a day out when you can travel again?

Ireland Raghly beach or indeed any of the Sligo Beaches or climbing Carrowkeel. Abroad, we would travel to Paris and Iceland.

We are looking forward to doing the great coastal walks at Aughris head and Raghly and to strolling the Killaspugbrone loop in Strandhill. Hiking up Knocknashee, Knocknarae,  Carrowkeel and the caves of Keash will follow as soon as all the beaches in Sligo have been visited. High on our priority list when we can travel is to revisit Iceland. We loved our winter visit when everything was covered in ice and snow and look forward to going at the end of summer. We are currently following Bjorn Steinbeck on Instagram who has amazing drone footage of the volcanic eruptions taking place at present. He sells beautiful prints also.  Iceland is such a beautiful country, and the erupting volcano region has definitely been added to our bucket list.

What sport or activity have you missed most?

Walking the beaches but have really enjoyed the extra time in the garden during lockdown. I have certainly missed working out in the gym and beach walks but have appreciated the extra time in the garden and preparing the poly tunnel for planting.  All the herbs and edible flowers are growing and I’ll be ready for our reopening.
